Marinated Cucumbers

Ingredients

  • 13 cup white vinegar (distilled)
  • 14 cup water
  • 14 cup sugar
  • 12 teaspoon salt
  • 1 large cucumber
  • 14 cup chopped peanuts (to garnish) (optional)

Directions

    Combine vinegar, water, sugar, and salt in a small saucepan.

    Bring to a boil, then reduce heat to medium and stir until sugar is dissolved.

    Remove from heat & let cool to room temperature.

    Peel cucumber, cut into quarters lengthwise, then remove seeds & cut each quarter into 1/4 inch chunks.

    Place in a bowl, pour marinade over the cucumbers, and stir to blend.

    Refrigerate for at least an hour, preferably two.

    To serve, drain and garnish with peanuts, if desired.
