- Flank steak (2 pounds)
- 1/3 cup minced shallot
- 3 tablespoons soy sauce
- 1/2 cup olive oil
- 3 tablespoons fresh thyme
- Big dash hot sauce
- 3 tablespoons freshly squeezed lemon juice
Directions

1Place the flank steak in a zip-lock bag.

2In the bag combine the minced shallot, soy sauce, olive oil, thyme, hot sauce and lemon juice.

3Freeze overnight.

4It should be thawed by the time it is needed.

5When ready to prepare, remove flank steak from the marinade and place on a grill pan.

6Grill for about 3 or 4 minutes (for rare), or up to 5 minutes for medium.
