- 4 cups fresh lady peas
- 2 tablespoons fresh lemon juice
- 2 tablespoons white wine vinegar
- 1 1/2 tablespoons extravirgin olive oil
- 1/2 teaspoon salt
- 2 garlic cloves, minced
- 1/4 cup sliced shallots
- 3 tablespoons chopped fresh parsley
- 1/8 teaspoon freshly ground black pepper
Directions

1Sort and wash lady peas; cook peas in boiling water for 20 minutes or until tender. Drain.

2Combine juice and next 4 ingredients (through garlic) in a large bowl. Add peas, shallots, parsley, and pepper; toss well. Cover and chill.
