Marinated Mushroom Salad

- 1 lb. fresh mushrooms, cleaned and sliced
- 6 oz. vinegar
- 1/2 tsp. dried tarragon
- juice of 2 lemons
- salt and pepper to taste
- 1/2 tsp. sugar
- 3 oz. oil
- 1/4 c. Parmesan cheese
- 1 hard-cooked egg, sieved
- fresh parsley sprigs
Directions

1Place mushrooms in a glass bowl.

2Combine vinegar, tarragon, lemon juice, salt, pepper and sugar in a blender container.

3Blend to mix.

4Pour oil in a steady stream while blender is on.

5Add cheese and blend again.

6Pour dressing over mushrooms and let stand a few hours at room temperature.

7To serve, spoon mushrooms onto lettuce leaves; top with egg and garnish with parsley sprigs. Serves 4 to 6.
