- 1 lb mushroom
- 3 tablespoons olive oil
- 4 tablespoons vinegar
- 12 teaspoon salt
- 12 teaspoon oregano, crushed
- 1 dash pepper
- 1 tablespoon parsley
- 1 garlic clove, minced
Directions

1Wash and drain mushrooms.

2If large, cut in half and trim or quarter.

3Place in medium saucepan with small amount of water and bring to a boil.

4Cover and simmer for 5 to 10 minutes.

5Drain.

6Mix together remaining ingredients and pour over drained mushrooms.

7Chill for several hours.

8Pour off some of liquid before serving.

9Can make ahead.
