- 2 lbs fresh mushrooms (medium, 50-60)
- 2 cloves garlic
- 1 cup red wine vinegar
- 1 cup water
- 12 cup olive oil
- 12 cup vegetable oil
- 1 bay leaf
- 1 teaspoon salt
- 12 teaspoon dried thyme leaves
- 12 whole black peppercorns
Directions

1Clean mushrooms and set aside.

2Crush garlic.

3For marinade, combine all ingredients in Dutch oven.

4Bring to a boil; reduce heat and simmer 5 minutes.

5Add mushrooms; simmer,uncovered, 10 minutes.

6Remove from heat.

7Let stand until cooled slightly.

8Transfer mushrooms and marinade to container; cover and refrigerate until ready to serve.

9To serve, drain marinade from mushrooms.

10Transfer mushrooms to serving dish.
