- 3 carrots, chopped
- 2 stalks celery, chopped
- 2 onions, chopped
- 5 to 6 red or green peppers, chopped
- 1 lb. fresh mushrooms
- 1 c. vinegar
- 1 c. sugar
- 3 Tbsp. pickling spices
- water
- 1 bottle Italian dressing
Directions

1Use enough water to cover vegetables.

2Bring to a boil for 2 to 3 minutes until vegetables are still crisp.

3Drain off liquid. Cover with 1 bottle Italian dressing.

4Blanch 1 pound fresh mushrooms.

5Add to vegetable mixture.

6Refrigerate.

7Will keep for days.
