  • 1 c. hazelnuts
  • 1/3 c. red wine or red wine vinegar
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. dried thyme
  • 1/2 tsp. fennel seeds, slightly crushed
  • 1/2 lb. small button mushrooms, cut in half (about 3 c.)

    Spread hazelnuts on baking sheet; toast in oven until aromatic, about 10 minutes.

    Rub nuts with a kitchen towel to remove their papery skins.
