- 1 c. hazelnuts
- 1/3 c. red wine or red wine vinegar
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme
- 1/2 tsp. fennel seeds, slightly crushed
- 1/2 lb. small button mushrooms, cut in half (about 3 c.)

2Spread hazelnuts on baking sheet; toast in oven until aromatic, about 10 minutes.

3Rub nuts with a kitchen towel to remove their papery skins.
