- 4 whole green or red peppers
- 1/2 c. olive oil
- 1/4 c. tarragon vinegar
- 2 Tbsp. capers
- 1 clove garlic, crushed
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Place the whole peppers in shallow pan, 4-inches from heat. Broil 12 to 15 minutes, turning to broil all sides.

2Cool, cut in half, peel off thin skin and remove seeds and hard pulp.

3Cut peppers lengthwise into 1/4-inch strips and place in bowl. Combine all other ingredients in jar and shake.

4Pour over peppers. Serve at room temperature.
