Ingredients

  • 2 cups plain yogurt
  • 2 tbsp. lemon juice
  • 4 cloves garlic, minced
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground coriander
  • 2 lb. pork tenderloin, cut into 1-inch pieces
  • 8 sm. white onions, halved
  • 8 cherry tomatoes
  • 1 md. sweet red peppers, cut in 1-1/2-inch pieces
  • 1 md. green pepper, cut in 1-1/2-inch pieces

Directions

    In a medium glass bowl, combine yogurt, lemon juice, garlic, cumin and coriander; mix well.

    Add pork; cover and refrigerate for 6 hours or overnight.

    Alternate pork, onions, tomatoes and peppers on eight skewers.

    Grill over medium coals for about 30-35 minutes or until meat reaches desired doneness.
