Marinated Tomatoes

Ingredients

  • 3 large tomatoes, peeled and diced
  • 1 large onion, diced
  • 3 ribs celery, diced
  • 1 large green pepper, diced
  • salt and pepper to taste
  • 1 dash garlic salt (optional)
  • 1/4 c. sugar
  • 1/4 c. cider or regular vinegar
  • 1/4 c. water
  • 2 Tbsp. salad oil

Directions

    Place diced tomatoes, onion, celery and green pepper in bowl. In small bowl, combine sugar, water, vinegar and oil.

    Mix well. Pour over vegetables.

    Stir gently to mix.

    Cover and chill in refrigerator several hours or overnight.

    Makes about 6 servings. Can add more vegetables to mixture as you desire.
