- 1 lb tomatoes, cut in wedges
- 14 cup olive oil
- 3 tablespoons red wine vinegar
- 1 12 tablespoons dried parsley
- 1 scallion, greens only, chopped
- 12 teaspoon dried oregano
- 1 teaspoon kosher salt
- 12 teaspoon sugar
- 12 teaspoon garlic powder
- 14 teaspoon fresh coarse ground black pepper
Directions

1Place tomatoes in tupperware container.

2Whisk together the rest of the ingredients and pour over the tomatoes.

3Cover the tomatoes and marinate at room temperature for at least an hour, or refrigerate up to 5 days.

4Allow to come to room temperature before serving.
