Marinated Vegetable Salad

Ingredients

  • 2 large cucumbers
  • 1 large red or green pepper
  • 1 (8 oz.) can whole corn, drained
  • 2 Tbsp. finely chopped red onion
  • 1/4 c. vegetable oil
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. sugar
  • 1/2 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 large tomato, sliced

Directions

    Cut 1/4 of one cucumber into thin slices; set aside.

    Cut remaining cucumber into bite-size cubes.

    Cut pepper into thin julienne strips.

    In large bowl combine cucumber cubes, green pepper, corn and onion.

    In a small bowl combine oil, vinegar, sugar, mustard, salt and pepper.

    Pour over vegetables.

    Toss to coat well with dressing.

    Cover and refrigerate at least 1 hour.
