Marinated Vegetable Salad

Ingredients

  • 3/4 c. vinegar
  • 1/2 c. vegetable oil
  • 1 tsp. salt
  • 1 c. sugar
  • 1 Tbsp. water
  • 1 tsp. pepper
  • 1 (16 oz.) can French green beans, drained
  • 1 pkg. frozen peas or 1 can peas, drained
  • 1 (9 or 12 oz.) can Shoe Peg corn, drained
  • 1 (2 oz.) jar pimentos, drained
  • 1 bunch green onions, chopped

Directions

    Combine first 6 ingredients in medium saucepan; bring to a boil while stirring to dissolve sugar.

    Set aside to cool.

    In large bowl or covered Tupperware bowl, combine next 6 ingredients. Pour cooled liquid over the vegetables.

    Let marinate at least 12 hours. Stir occasionally.

    This stays good several days.
