Ingredients

  • 1 c. olive or vegetable oil
  • 1/2 c. vinegar
  • 1 large clove garlic, minced
  • 1 tsp. dried oregano leaves, crushed
  • 1/4 tsp. pepper
  • 1 pkg. (16 oz.) fresh mushrooms
  • 2 c. broccoli flowerets
  • 2 c. cauliflowerets
  • 2 c. red pepper, cut in 1 inch sq.
  • 2 c. diagonally sliced carrots

    In a large bowl, combine first 5 ingredients.
