  • 2 heads cauliflower
  • 3 green peppers
  • 3 pimentos
  • 2 lb. carrots
  • 1 bunch celery
  • 1 lb. mushrooms
  • 3 zucchini
  • 1 bunch broccoli
  • 2 cucumbers
  • 1 box (pt.) cherry tomatoes
  • 1/2 c. salad oil
  • 2/3 c. olive oil
  • 1/2 c. lemon juice
  • 3 c. tarragon vinegar
  • 1/2 c. sugar
  • 3 cloves garlic
  • 1 Tbsp. salt
  • 1 Tbsp. prepared mustard
  • 1 Tbsp. tarragon leaves
  • pepper to taste

Directions

    Cut vegetables into bite-size pieces. Combine oil, olive oil, vinegar and remaining ingredients. Stir until well mixed. Pour over vegetables. Cover and chill at least 12 hours. Stir occasionally. Makes 30 servings.
