  • 2 heads cauliflower
  • 1 green pepper
  • 1 red pepper
  • 1 bunch celery
  • 1 lb. carrots
  • 1 lb. mushrooms
  • 3 small zucchini
  • 1 bunch broccoli
  • 2 cucumbers
  • 1 bunch radishes
  • 1 small eggplant
  • 24 crushed peppercorns
  • 1/2 c. salad oil
  • 1/2 c. olive oil
  • 3 c. tarragon vinegar
  • 1/2 c. sugar
  • 3 chopped garlic cloves
  • 1 Tbsp. salt
  • 1 Tbsp. prepared mustard
  • 2 Tbsp. tarragon leaves

    Cut all vegetables into bite-sized pieces.

    Combine remaining ingredients and mix with the vegetables.

    Cover and chill for at least 12 hours.
