- 2 heads cauliflower
- 1 green pepper
- 1 red pepper
- 1 bunch celery
- 1 lb. carrots
- 1 lb. mushrooms
- 3 small zucchini
- 1 bunch broccoli
- 2 cucumbers
- 1 bunch radishes
- 1 small eggplant
- 24 crushed peppercorns
- 1/2 c. salad oil
- 1/2 c. olive oil
- 3 c. tarragon vinegar
- 1/2 c. sugar
- 3 chopped garlic cloves
- 1 Tbsp. salt
- 1 Tbsp. prepared mustard
- 2 Tbsp. tarragon leaves
Directions

1Cut all vegetables into bite-sized pieces.

2Combine remaining ingredients and mix with the vegetables.

3Cover and chill for at least 12 hours.
