- 1 c. Mazola corn oil
- 1 c. cider vinegar
- 1/3 c. sugar
- 4 tsp. salt
- 1/2 tsp. pepper
- 2 (16 oz. each) cans red kidney beans, drained
- 2 (16 oz. each) cans whole baby carrots, drained
- 1/2 c. finely chopped onion
- 3 (10 oz. each) pkg. frozen broccoli spears, cooked and drained
Directions

1Mix first 5 ingredients.

2Place beans and carrots in 13 x 9 x 2-inch dish.

3Sprinkle with onion.

4Top with broccoli.

5Pour oil mixture over vegetables.

6Cover and refrigerate overnight.

7Drain on platter.

8Makes 12 servings.
