- 5 lb. sugar
- 10 c. water
- 1 extra c. water
Directions

1Halve the fruit, scoop out the pulp and chop roughly.

2Tie the pips (seeds) in muslin loosely.

3Shred peel finely or coarsely as required.

4Put peel, pulp and pips into a large China bowl, cover with 10 cups of water and leave overnight.
