- 2 c. sugar
- 3 eggs
- 1 Tbsp. butter
- dash of vanilla
- 1 c. milk
- 2 c. mashed potatoes
- 3 1/2 to 5 c. flour
- 5 tsp. baking powder
- 1/2 tsp. salt
Directions

1Mix sugar, eggs and butter.

2Add milk and vanilla.

3Stir in mashed potatoes.

4Mix 3 1/2 cups flour, baking powder and salt; mix in.

5Add more flour, if needed (up to 5 cups).

6Dough should be stiff.

7Roll 1 to 1 1/2-inches thick, cut out and cook in deep fryer.

8Makes about 40 to 50 donuts.
