Mashed Butternut Squash

  • 1 large Butternut Squash
  • 2 tbl. Butter
  • 1/4 cup packed Brown Sugar
  • 1 tsp. Salt

    Poke some holes in squash and place in microwave for 10 mins.

    On high.

    Flip and repeat for 10 more mins.

    Will be Very Hot.

    Remove and cover with foil.

    Let cool enough to handle.

    Slice length wise and remove seeds.

    Remove pulp.

    The skin should literally peel off.

    If still hard, microwave 5 more mins.

    Add pulp to remaining ingredients and mash with fork.

    Should be very soft.

    Serve or reheat later.
