Mashed Cauliflower

  • 1 cauliflower
  • 1 11/16 cups water
  • 1 11/16 cups milk
  • olive oil to taste
  • 8 sprigs fresh thyme
  • 2 teaspoons margarine
  • nutmeg to taste
  • 1 lemon
  • salt to taste

Directions

    Cook the cauliflower in a mix of water and milk. Ideally the mix should be half water and half milk, because I ve made it with only milk and found it too rich.

    After cooking, blend everything well with a food processor or mixer.

    Add the olive oil, thyme, margarine, nutmeg, lemon zest, and salt while mixing.

    Serve with a drizzle of olive oil over the top.
