- 1 cauliflower
- 1 11/16 cups water
- 1 11/16 cups milk
- olive oil to taste
- 8 sprigs fresh thyme
- 2 teaspoons margarine
- nutmeg to taste
- 1 lemon
- salt to taste
Directions

1Cook the cauliflower in a mix of water and milk. Ideally the mix should be half water and half milk, because I ve made it with only milk and found it too rich.

2After cooking, blend everything well with a food processor or mixer.

3Add the olive oil, thyme, margarine, nutmeg, lemon zest, and salt while mixing.

4Serve with a drizzle of olive oil over the top.
