- 2 -3 parsnips
- 14 cup butter
- 1 tablespoon milk

1First wash and peel the parsnips (I save the peels for making Veg.

2Stock but you can recycle them or compost them) Cut in to smallish pieces like you would a carrot.

3Pop them into a pot of water and bring to a boil (much like you would do for mashed potatoes).

4Boil until a fork inserted into a piece goes in smoothly.

5About 15-20 minutes.

6Drain and put back in pot (to keep warm) and mash with the butter and milk.

7(*note: I use only UK butter, it has a higher percentage of milk fat and makes a creamier consistency.
