Mashed Parsnips

  • 2 -3 parsnips
  • 14 cup butter
  • 1 tablespoon milk

    First wash and peel the parsnips (I save the peels for making Veg.

    Stock but you can recycle them or compost them) Cut in to smallish pieces like you would a carrot.

    Pop them into a pot of water and bring to a boil (much like you would do for mashed potatoes).

    Boil until a fork inserted into a piece goes in smoothly.

    About 15-20 minutes.

    Drain and put back in pot (to keep warm) and mash with the butter and milk.

    (*note: I use only UK butter, it has a higher percentage of milk fat and makes a creamier consistency.
