Mashed Potato Bread

Ingredients
- 1 pkg. active dry yeast
- 1 1/2 c. warm water
- 2/3 c. sugar
- 1 1/2 tsp. salt
- 2/3 c. shortening
- 2 eggs
- 1 c. lukewarm mashed potatoes
- 7 to 7 1/2 c. all-purpose flour
- soft butter or margarine
Directions

1Dissolve yeast in warm water.

2Stir in sugar, salt, shortening, eggs, potatoes and 4 cups flour.

3Beat until smooth.

4Mix in enough of remaining flour to make dough easy to handle.

5Turn dough onto lightly floured board and knead until smooth and elastic (about 5 minutes).

6Place in greased bowl, then turn greased side up.

7Let rise.

8Punch down and cut off amount needed.

9Shape and cover.

10Let rise until double (about 1 1/2 hours).

11Heat oven to 400°.

12Bake rolls 15 to 20 minutes.

13Dough can be refrigerated up to 5 days. (Punch down occasionally.)
