- 8 to 10 boiling potatoes
- 1 (8 oz.) pkg. cream cheese
- 2 eggs, slightly beaten
- 2 Tbsp. all-purpose flour
- 2 Tbsp. parsley
- 2 Tbsp. minced chives
- salt and pepper to taste
- 1 (3 1/2 oz.) can French fried onions
Directions

1Peel and boil potatoes until tender.

2Drain and put in large bowl of electric mixer.

3Beat until smooth; add cream cheese and beat again.

4Blend in eggs, flour, parsley, chives and seasonings. Turn into a buttered casserole and spread slightly crushed onions on top.

5Bake, uncovered, at 325° for 25 to 30 minutes.

6Serves 8.
