- 2 pounds all purpose potatoes peeled and quartered
- water
- 1 cup butter cut in chunks
- 1 teaspoon salt
- 1 teaspoon white pepper
- 2 eggs lrgs
Directions

1Put potatoes in water to cover in a large saucepan.

2Bring to boil over high heat.

3Cover; reduce heat to medium and cook 15 minutes until tender; drain well in colander.

4Return to pot or place in large bowl.

5Add butter, salt and pepper.

6Break up potatoes with potato masher or electric mixer.

7Add 1 egg; mash until smooth and well blended.

8Spoon into a pastry bag fitted with a large star tip.

9Lightly grease a cookie sheet.

10Pipe 16 mounds of potatoes on prepared sheet.

11Beat remaining egg in a small bowl.
