- 9 large potatoes
- 2 (3 oz.) cream cheese
- 1 c. sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
- grated cheese (optional)
Directions

1Peel potatoes and put into saucepan.

2Cover potatoes with water and 1 teaspoon salt.

3Cook until tender.

4Drain and then mash.

5Add cream cheese, sour cream, pepper and butter.

6Beat until light and fluffy.

7If too thick, add a little milk.

8Cool. Cover and place in refrigerator.

9Potatoes may be used any time within two weeks.

10They do not get stiff like other leftover mashed potatoes.

11Recipe freezes well.

12To use, place desired amount in greased casserole dish; dot with butter (grated cheese) to cover the top.

13Bake at 350° until heated through (about 30 minutes).

14If frozen, bake longer.

15Makes 8 cups or 12 servings.
