Mashed Pumpkin and Bean Pots

- 500 g pumpkin, peeled and chopped
- 300 g butter beans, drained
- 3 tablespoons cream
- 1 egg, beaten
- 12 cup fresh breadcrumb
- 2 teaspoons butter
- maple syrup or honey, to drizzle
Directions

1Cook pumpkin in boiling water till tender.

2Mash pumpkin and drained beans together.

3Stir in cream and season with salt and pepper.

4Spoon into 4 x 1 cup moulds.

5Sprinkle with breadcrumbs, dot with butter.

6Bake 200 C for 25 minutes.

7Drizzle with maple syrup and serve.
