Mashed Pumpkin and Bean Pots

  • 500 g pumpkin, peeled and chopped
  • 300 g butter beans, drained
  • 3 tablespoons cream
  • 1 egg, beaten
  • 12 cup fresh breadcrumb
  • 2 teaspoons butter
  • maple syrup or honey, to drizzle

Directions

    Cook pumpkin in boiling water till tender.

    Mash pumpkin and drained beans together.

    Stir in cream and season with salt and pepper.

    Spoon into 4 x 1 cup moulds.

    Sprinkle with breadcrumbs, dot with butter.

    Bake 200 C for 25 minutes.

    Drizzle with maple syrup and serve.
