Mashed Red Potatoes

  • 2 lb. red potatoes
  • 3 tbsp. margarine or butter
  • 1 tsp. salt
  • .67 c. whole milk

    In 3-quart saucepan, combine potatoes and water to cover; heat to boiling over high heat.

    Reduce heat to low; cover and simmer 15 minutes or until potatoes are tender.

    Drain.

    Return potatoes to saucepan.

    With potato masher, coarsely mash potatoes with margarine and salt.

    Gradually add warm milk; continue to mash until almost smooth and well blended.
