- 2 lb. unpeeled red skinned potatoes, cut into 1-inch chunks
- 1/4 c. low-fat milk
- 1/2 tsp. fresh ground pepper
- 3 Tbsp. finely chopped Italian parsley
- 1 Tbsp. unsalted butter or olive oil
Directions

1Place potatoes in a medium saucepan with water to cover. Bring to boil over high heat.

2Lower heat to a simmer and cook until potatoes are cooked through, about 10 minutes.

3Drain, reserving 1/4 cup of the cooking water.

4Place the pot over low heat.

5Using a potato masher, roughly mash, adding the reserved water, milk, pepper, parsley and butter or oil.
