- 3 medium sweet potatoes (2 pounds), peeled and quartered
- 1-1/2 cups water
- 1/4 cup butter, cubed
- 3 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon pepper
Directions

1Place sweet potatoes on rack in a 6-qt. pressure cooker; add water. Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook for 8 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.)

2Remove from the heat; allow pressure to drop on it's own. Drain. transfer sweet potatoes to a food processor. Add the butter, honey, salt, nutmeg, cinnamon and pepper; cover and process until smooth.
