Mayo and Mustard Cod

- 1/4 c. light mayonnaise
- 1/2 tsp. Dijon mustard
- .13 tsp. salt
- .13 tsp. coarsely ground black pepper
- 4 small cod steaks (3/4 inch thick)
Directions

1Preheat broiler.

2Lightly spray rack in broiling pan with nonstick cooking spray.

3In small bowl, mix mayonnaise, mustard, salt, and pepper; set aside.

4Place cod steaks on rack in broiling pan.

5With broiling pan at closest position to source of heat, broil cod 7 minutes.

6Remove pan from broiler; do not turn cod over.

7Spread mayonnaise mixture on top of cod.

8Return pan to broiler and broil cod 1 to 2 minutes longer, until mayonnaise mixture is lightly browned and bubbly and cod flakes easily when tested with a fork.
