Mayo and Mustard Cod

  • 1/4 c. light mayonnaise
  • 1/2 tsp. Dijon mustard
  • .13 tsp. salt
  • .13 tsp. coarsely ground black pepper
  • 4 small cod steaks (3/4 inch thick)

    Preheat broiler.

    Lightly spray rack in broiling pan with nonstick cooking spray.

    In small bowl, mix mayonnaise, mustard, salt, and pepper; set aside.

    Place cod steaks on rack in broiling pan.

    With broiling pan at closest position to source of heat, broil cod 7 minutes.

    Remove pan from broiler; do not turn cod over.

    Spread mayonnaise mixture on top of cod.

    Return pan to broiler and broil cod 1 to 2 minutes longer, until mayonnaise mixture is lightly browned and bubbly and cod flakes easily when tested with a fork.
