- 1 fresh egg yolk
- 2 tablespoons water
- 1 teaspoon Dijon mustard
- Juice of 1/2 lemon
- 1 1/2 cups canola oil or other mild-flavored oil
- Kosher salt
Directions

1Put the egg yolk, water, mustard, and lemon juice in the bowl of a food processor and pulse to combine.

2With the motor running, add the oil through the feed tube in a slow but steady stream and process until a smooth mayonnaise forms.

3Season to taste with salt.

4It will keep for two days in the refrigerator.

5Follow the mayonnaise recipe above, adding 1 stalk chopped spring garlic.

6Strain the aioli through a sieve to catch any tough fibers.
