  • 1 fresh egg yolk
  • 2 tablespoons water
  • 1 teaspoon Dijon mustard
  • Juice of 1/2 lemon
  • 1 1/2 cups canola oil or other mild-flavored oil
  • Kosher salt

Directions

    Put the egg yolk, water, mustard, and lemon juice in the bowl of a food processor and pulse to combine.

    With the motor running, add the oil through the feed tube in a slow but steady stream and process until a smooth mayonnaise forms.

    Season to taste with salt.

    It will keep for two days in the refrigerator.
