Mayonnaise Cornbread Muffins

  • 1 c. unsifted flour
  • 1 c. yellow corn meal
  • 3 Tbsp. sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 1/2 c. Hellmann's Mayonnaise

Directions

    Grease 12 (2 1/2 x 1 1/4 inch) muffin cups.

    Stir together flour, corn meal, sugar, baking powder and salt in a large bowl. Stir milk into mayonnaise in another small bowl.

    Stir milk mixture into flour mixture just until moistened.

    (Batter will be lumpy). Turn into prepared pan, filling each cup 2/3 full.

    Bake at 400° for 20 minutes or until golden; or bake in greased iron skillet in the oven at 400° for 25-30 minutes.
