"Jersey Devil" Clams

Ingredients

  • 2 c. ground clams
  • 1/2 c. clam juice
  • chopped onion to taste
  • 3 Tbsp. ground green pepper
  • 2 Tbsp. celery leaves
  • 1/4 c. chopped celery
  • 1/8 tsp. thyme
  • 1/2 tsp. pepper
  • 1 Tbsp. mustard
  • 1 c. bread crumbs
  • paprika
  • butter

Directions

    Simmer clams in juice for 5 minutes.

    Cook onion, green pepper, celery and celery leaves in a little butter until tender. Combine with thyme, pepper, mustard and bread crumbs.

    Mix well with clams.

    Grease clam shells, fill with mixture and sprinkle lightly with paprika.

    Bake at 350° for 25 to 30 minutes.
