- 1/2 cups Cooked Quinoa, Divided
- 1/2 cups Flour Blend (see Note Below)
- 1/2 cups Buttermilk
- 1 whole Egg
- 2 Tablespoons Sugar
- 1 pinch Salt
- 1 teaspoon Baking Powder
- 1/4 cups Flax
- 2 Tablespoons Unsalted Butter
- 1/2 cups Cornmeal
Directions

1Cook a third of a cup of quinoa according to package instructions.

2This may include a lot of rinsing!

3In the winter months, I keep cooked quinoa on hand so I can save myself the time and hassle of the multiple rinses.

4DONT skip the rinses!

5I just threw the flour blend (see note below) and buttermilk together, then decided that was stupid and tried to pour out the buttermilk, which was more stupid, and then tried to combine things according to whether they were wet or dry ingredients, before glopping the whole thing together.

6That was when I added the 1/2 cup of cornmeal, because it looked too soggy.

7Then I cooked them as I would regular pancakes.

8Despite my chaotic nature, they turned out fantastically and I packaged up the last three for later feasting.

9Note: Flour blend is 1 part tapioca flour, 1 part rice flour, and 1 part potato starch or cornmeal.
