Ingredients
- 2 Tbsp. meat drippings
- 1 to 2 Tbsp. flour
- 1 to 2 Tbsp. fat
- degreased pan juices and milk, water, stock, cream, wine or flat beer to make 1 c.
- salt and pepper to taste
- fresh or dried minced herbs
Directions

1Remove meat from pan.

2Strain drippings and remove fat except for 1 to 2 tablespoons.

3Pour off all but 2 tablespoons drippings. Blend into them flour with wire whisk until flour has thickened and until mixture is well combined and smooth.

4Continue to cook slowly and stir constantly while adding degreased pan juices and whatever liquid you choose to make 1 cup.

5Add salt, pepper and minced herbs.

6Add a few drops of coloring.

7Cook until thickened. Makes 1 cup.
