  • 500 grams beef or veal (about 1 1/3 lb.)
  • 50 grams salt pork or bacon (about 1.76 oz.)
  • 3 eggs
  • 2 to 3 cloves garlic
  • 2 Tbsp. flour
  • salt and pepper to taste

    Rinse a long slice of meat and pat dry.

    Pound it lightly with a mallet; salt and pepper it.

    Put on it slices of salt pork or bacon and hard-boiled eggs cut into quarters.

    Roll meat up and dredge in flour.

    Fry, add some beef stock and bake in oven until done at 350°.

    Just before the meat is done, add minced garlic. Serve with potatoes and vegetables.
