Ingredients

  • 2 lb. ground beef
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 eggs, beaten
  • 1/4 c. chopped parsley
  • 1/4 tsp. garlic salt
  • 1/2 c. fine cracker or bread crumbs
  • 2 Tbsp. salad oil
  • 4 to 6 small onions, cut into 8's
  • 2 to 3 c. diced celery
  • 3 to 4 c. diced potatoes
  • 1/4 c. rice
  • 6 c. tomato juice
  • 6 c. water
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 can corn

Directions

    Combine meat, salt, pepper, eggs, parsley, garlic salt and cracker crumbs with a little milk.

    Mix thoroughly.

    Form into walnut size balls and dip in flour.

    Heat oil and lightly brown meat balls.

    Add remaining ingredients (except corn) and boil. Cover and cook slowly until tender.

    Add corn last.

    This is even better the next day, reheated.
