Meatball Soup

Ingredients

  • 1 lb. ground beef
  • 2 qt. boiling water
  • 2 2/3 c. tomato sauce
  • 1/2 tsp. chili powder
  • 1/4 c. raw rice
  • 1/2 tsp. salt
  • 8 beef bouillon cubes
  • 1/4 tsp. pepper
  • 1 egg, beaten
  • 1 c. minced onion
  • 1 Tbsp. oil

Directions

    Dissolve bouillon in water in 4-quart saucepan.

    Add tomato sauce and chili powder.

    Simmer over low heat.

    Mix meat, rice, salt, pepper and egg lightly, but thoroughly.

    Shape into 60 small meatballs, 1 rounded teaspoonful of meat mixture for each ball. Saute onion in oil in frying pan until tender.

    Remove.

    Add to soup.

    Lightly brown meatballs in pan; drain excess fat.

    Drop into boiling soup.

    Simmer about 30 minutes.
