Ingredients

  • 1 1/2 lb. ground beef
  • 1 c. soft bread crumbs
  • 1/4 c. finely chopped onions
  • 1 egg, beaten
  • 1 tsp. salt
  • 1 tsp. marjoram
  • 1/4 tsp. thyme
  • 2 Tbsp. cooking oil
  • 1 (10 1/2 oz.) can condensed tomato soup
  • 1 (10 1/2 oz.) can condensed beef broth
  • 4 medium potatoes, pared and quartered
  • 4 carrots, scraped and cut 1-inch chunks
  • 8 small or 4 large onions, quartered
  • 2 Tbsp. chopped parsley

Directions

    Combine first 7 ingredients; shape into 24 meatballs.

    Brown meatballs in oil in a 4-quart Dutch oven.

    Remove as they brown. Combine soup and broth in Dutch oven.

    Add meatballs and vegetables; bring to a boil.

    Cover and simmer fo 30 minutes or until vegetables are tender.

    Add parsley.

    Makes 6 to 8 large servings.
