Squash Casserole

  • 2 1/2 c. cooked squash, drained
  • 1 can mushroom soup
  • 2 beaten eggs
  • 1 small onion, cut fine
  • dash of Accent
  • approximately 10 Ritz crackers
  • 1 c. grated sharp cheese
  • 2 Tbsp. butter

Directions

    Mash cooked squash; add butter, eggs, onion and Accent.

    Mix well.

    Add 5 crushed crackers and 1/4 cup grated cheese to mixture.

    Pour into buttered casserole dish.

    Put remaining crushed crackers and grated cheese on top.

    Bake at 350° for 30 minutes until heated through.
