Ingredients
- 2 Tbsp. oil
- 1 1/4 c. chopped onion
- 2 cloves garlic, minced
- 2 tsp. chili powder
- 1/4 tsp. each: dried basil leaves, oregano leaves and ground cumin
- 2 c. diced zucchini
- 1 c. diced carrots
- 2 lb. tomatoes, cut in eighths or 2 cans (undrained)
- 1 can chickpeas, drained
- 1 can kidney beans (undrained)
Directions

1In a 5-quart saucepot, heat oil over medium heat.

2Add next 6 ingredients.

3Cook, stirring 5 minutes, or until onion is tender. Add zucchini and carrots.

4Cook, stirring for 1 to 2 minutes. Stir in remaining ingredients. Bring to a boil.

5Reduce heat and simmer 30 to 35 minutes.

6Makes 6 servings.
