- 1 c. chopped onion
- 1 c. chopped green bell pepper
- 1 (28 oz.) can crushed tomatoes
- 1 (19 oz.) can red kidney beans
- 1 Tbsp. chili powder
- 1 (11 oz.) can vacuum-packed kernel corn
Directions

1Heat oil in a 2 to 3-quart saucepan.

2Add onion and pepper and cook 5 to 7 minutes, stirring often, until onion is translucent. Stir in remaining ingredients.

3Bring to a boil.

4Reduce heat and simmer, stirring occasionally, 15 to 20 minutes to blend flavors. Makes 8 cups or 4 servings.
