Ingredients

  • 1 lb. ground beef or ground turkey
  • 1/4 c. chopped onion
  • 1 clove mashed garlic
  • 1 can chopped spinach, drained
  • 3/4 c. cottage cheese
  • 2 eggs, beaten
  • 12 cooked manicotti shells
  • 1 jar or can spaghetti sauce
  • 1/2 c. grated Parmesan cheese
  • 1 c. shredded Mozzarella cheese

    Preheat oven to 350°.

    Lightly grease 13 x 9-inch baking pan; set aside.

    Brown ground beef in medium skillet over medium-high heat.

    Add onion and garlic.

    Saute 3 to 4 minutes.

    Drain off excess fat.

    Remove from heat and add spinach, cottage cheese, eggs, salt and pepper (to taste).

    Stir until well mixed.

    Fill each shell with 1/4 cup meat mixture.

    Place filled shells in prepared baking pan. Pour spaghetti sauce evenly over filled shells.

    Sprinkle Parmesan, then Mozzarella, over all.

    Bake 30 minutes.
