- 1/2 lb. Cheddar cheese, grated
- 1 large onion, chopped
- 1 or 2 jalapeno peppers, chopped
- 1 lb. ground beef or sausage
- 1 1/2 c. yellow cornmeal
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1/2 c. vegetable oil
- 1 c. milk
- 2 eggs, beaten
- 1 can cream-style corn
Directions

1Brown meat with the onion.

2Drain well.

3Mix cornmeal, oil, milk, eggs, salt, soda and cream-style corn.

4Pour half of cornmeal mixture into a 9 x 13-inch baking dish.

5Add meat and onion mix, spreading evenly across dish.

6Sprinkle cheese and jalapenos over meat.

7Add remaining cornmeal mixture.

8Bake at 375° for 45 minutes or until golden brown.
