- 2 1/4 teaspoons yeast
- 1/2 cup lukewarm water
- 2 cups sourdough starter
- 1 teaspoon salt
- 1/3 cup honey
- 1/4 cup melted butter
- 2 cups barley flour
- 2 cups whole wheat flour
- 1 cup all-purpose flour
Directions

1Dissolve yeast in water.

2Add sourdough starter, salt, honey and butter.

3Stir until well-blended.

4Add flours and blend.

5Turn onto a lightly floured surface and knead for a couple of minutes.

6Place dough in a large buttered bowl, turning to coat all sides.

7Cover with a towel and let rise in a warm place for about 1 hour, or until doubled in bulk.

8Punch down and knead for a couple of minutes.

9Divide dough into 2 equal pieces.

10Shape each piece into a ball.

11Place on a lightly greased baking sheet, cover, and let rise until doubled, about 45 minutes.

12Preheat oven to 375°.

13Bake for about 30 minutes, or until loaves are browned and sound hollow when tapped with a finger.

14Cool wrapped in a towel.
