Mediterranean Cauliflower Salad

Ingredients
- 1 head cauliflower, cut into florets
- 1/4 cup red bell pepper, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 cup Greek olive
- 1 tablespoon capers
- 1 tablespoon wine vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon dried oregano
- salt and pepper, to taste
Directions

1Steam cauliflower florets until just tender.

2Refresh under cold water to stop the cooking process.

3In a bowl, combine cauliflower, pepper, parsley, olives and capers, toss lightly.

4Whisk together the vinegar, oil and oregano and pour over vegetables.

5Marinate in the refrigerator for two hours or even overnight.

6Serve cold.
