- 2 Tbsp. margarine or butter
- 2 cloves garlic, crushed
- 1 small onion, chopped (about 1/4 c.)
- 6 boneless, skinless chicken breast halves (about 1 1/2 lb.)
- 1/2 c. red wine vinegar
- 2 tsp. chopped fresh or 1/2 tsp. dried thyme leaves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 large tomatoes, chopped (about 2 c.)
- 1 can (2 1/4 oz.) sliced ripe olives, drained
Directions

1Heat margarine in 10-inch skillet over medium-high heat until melted.

2Cook garlic, onion and chicken in margarine until chicken is brown on both sides.

3Stir in remaining ingredients; reduce heat.

4Cook 10 to 15 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

5Yields 6 servings.
