- 4 slices bacon, diced
- 4 boneless chicken breasts, skinned
- 1 (14 1/2 oz.) can Italian style stewed tomatoes
- 6 medium pitted black olives, cut in quarters
- 2 large garlic cloves, minced or 1/4 tsp. garlic powder
Directions

1In a large skillet, cook bacon over medium-high heat for 2 minutes (bacon will not be done).

2Flatten chicken slightly with palm of hand.

3Season with salt and pepper, if desired.

4Place chicken breasts in bacon drippings in skillet.

5Cook 6 minutes on each side or until chicken is no longer pink in center.

6Add tomatoes, olives and garlic to skillet.

7Cook uncovered about 5 minutes or until slightly thickened.

8Makes 4 servings.
